When you eat carbohydrates the body turns them into glucose and it enters the bloodstream for delivery to the cells in the body where it will be used as high octane fuel. If blood sugar increases too much insulin, a hormone is produced to get the excess out of the blood, and if not needed for energy to put it into fat storage.
Insulin resistance occurs when the body becomes insensitive to insulin. Even more insulin is needed to lower the blood glucose highs.
Researchers believe that approx. one out of four Americans has insulin resistance.
